This page is designed without tables. All of the layout, formatting, and positioning of elements is done with CSS. Portions of the content are served with PHP.

I recommend however serving the food WITH tables...

Garlic, Greens and Leeks Soup


2 leeks, washed, sliced lengthwise, and chopped.
6 cloves garlic, chopped
1 good sized onion, chopped
1 12 oz package portabella mushrooms, sliced
1/4 stick butter or 3 tbsp olive oil

Beef stock or 2 tbsp beef bouillon
1 ham hock (optional)
Pepper to taste
2 quarts water
2 slices bread, torn small
1 huge bunch of pot greens, in any combination, about 2 quarts chopped:
Large bunch of young wild chicory (the roadside weed with the blue flowers)
Dandelion greens
Mustard greens
Turnip greens
Beet greens…
Swiss chard greens…
Radish greens (these are awesome)
Kale….

In soup pot, sauté garlic, onion, leeks, and mushrooms in butter or oil.

Add water, beef stock, bouillon, pepper, bread, and chopped greens.

Cook 1 to 2 hours, until done, stirring occasionally.
